Kachemak Bay Knife Co. fillet knives are hand made from a high carbon steel and Dymondwood handles. Dymondwood is constructed from thin hardwood veneers that have been dyed and pressed together, with a strong bonding resign, to form plywood like sheets of multicolored woods. Kachemak Bay Knife Co. fillet knives are Central Charters brand knife and only sold here. Our fillet knives are available in two sizes: 7" & 8". We typically recommend 7" for salmon and 8" for halibut.
